2014 Ab Ovo Pinot Gris
The 2014 Ab Ovo is a delectable combination of complex floral and fruit notes that play delicately together with balanced acidity and minerality to form a Pinot Gris that is seamless from start to finish. Lemongrass transitions into hints of white peach, honeydew melon and citrus zest to create a captivating bouquet. The palate opens with bright citrus fruit and follows with subtle wet stone minerality, mingled with fresh acidity and fades into a succulent finish. Enjoy this wine with your favorite seafood, such as oysters on the half-shell.
The fruit for our Ab Ovo Pinot Gris comes from one small 1.26 acre block at our Red Hills Estate vineyard in the Dundee Hills planted to an Alsatian clone of Pinot Gris (#152). For the first time, we also harvested a small amount of fruit from two additional blocks of young vines at Red Hills Estate Vineyard.
The fruit for our 2014 Ab Ovo was hand harvested on September 19th, then gently whole cluster pressed to tank where it was cold settled for 48 hours. The juice was then transferred to a concrete egg, stainless steel barrels and new and aged Acacia barrels for fermentation and aging. The wine remained in these vessels for four months prior to finishing and bottling.
